So the rule here is boring and absolute: it gets layered the morning it goes out, and it gets a week of shelf life instead of a month, because the only way to get a month is to put something in it that nobody wants to eat.
Why only Los Angeles
Because a pudding that is genuinely fresh cannot be shipped. The moment you put it on a truck overnight you are designing for the truck, not for the person eating it — more stabiliser, more sugar, firmer set, longer date. Staying inside one city means the product never has to survive anything.
It also means we know every shop that sells it. All 35 of them are places somebody from here has stood in.
Why shops instead of a storefront
A storefront serves the block it is on. A cold case in 35 shops serves the city. Coffee bars, markets, delis, lunch counters — the places people already go. The pudding turns up where you already are, which is a better plan than asking you to drive somewhere.
